Quinoa Chicken Recipe

Quinoa Chicken and veggies

When it comes to fitness and cooking, I like to keep it simple and efficient. This recipe is both of the those things and it’s delicious!


Ingredients:

  • 3 or 4 boneless, skinless chicken breasts, organic if possible, sliced into 2-inch pieces

  • 2/3 cup of whole wheat or chickpea flour

  • 1 teaspoon sea salt

  • 1/4 teaspoon of pepper

  • 2 eggs, 1 egg white or egg substitute

  • 2 tablespoons of water

  • 2 cups of cooked quinoa


1. Preheat an oven to 425 degrees. Line a baking sheet with parchment paper and spray with cooking spray.

2. Combine your choice of flour, salt, and pepper in a small bowl. Option to add additional spices to your flour bowl.

3. Mix together the eggs and water in a second bowl.

4. Put the quinoa in a third bowl.

5. Coat the chicken pieces in the flour mixture, dip them in the eggs, then the quinoa. Make sure to cover them well, and place them on the baking sheet.

6. Spray the chicken with the cooking spray to give them a crispy texture. Bake them for 15-20 minutes, or until they're cooked through and browned. Option to use an air fryer!

7. Serve with your favorite sauce.


Save any leftovers for lunch. They are just as good the next day!
