Protein Pancakes!

Sundays can be a great day to relax, recharge and get ready for the week. And of course there are the Sunday pancakes! This recipe is very easy, just a few ingredients, and can be made quickly any day of the week. You can also add them to your weekend meal prep and keep them in the fridge or freezer.

The details:
1 cup oats or your favorite flour.
1 scoop of your favorite vanilla protein.
1 scoop collagen peptides (optional).
1 tbsp chia seeds (optional)
1/2 tsp baking soda
Blend dry ingredients together.
Mix one banana with 1 egg or egg substitute and 1/4-1/2 cup almond or coconut milk.
Combine wet and dry ingredients and mix well. *Add additional nut milk if necessary.
Add fresh or frozen blueberries and/or sliced strawberries.
Cook and Enjoy..
Coconut nectar or date syrup are low glycemic alternatives to syrup and they have a wide range of minerals!
